| IRISH CHOCOLATE POTATO CAKE |
1 cup vegetable shortening
2 cups sugar
4 eggs
3 squares semi-sweet chocolate, melted
1 teaspoon vanilla extract
3/4 c buttermilk
1 cup prepared instant mashed potato flakes, cooled LEFT OVERS WORK
2 cups all-purpose flour, sifted
1 teaspoon baking soda
1 teaspoon salt
beat shortening, sugar, and eggs medium, beat in melted chocolate, start alternating additions of flour and butter milk, beat in potatoes, add remainder of ingredients. Beat well, choose your baking pan and grease it with cooking spray. Bake on 375 for 25 min or untill an inserted tooth pick comes out clean. Cool and frost with a glaze of melted chocolate or a can of fudge frosting.
